Have you cooked your Sandhill Cranes yet ? Is so how did you prepare them and how were they ?

I hunt sometimes near Kingsville N.A.S. and have seen thousands of them during dear season flying low.

there is some vacuum sealed in the door of the freezer in the barn at the house...you and Roadkill go get them...

STOP SENDING THE DANG WIND....we're trying to sail back to texas from grand cayman...

Well they look rare enough and Delicious.
How did they go down and what red meat would you compare them to honestly ?
Is it just the breast meat ?

I've never had Sandhills but yesterday I did cook up a Canada Goose that I shot this winter up in New Mexico. Mary was kind of freaked out by the dark red meat. She was expecting chicken like meat but did say it was tasty.
