I tried Bluffers recipe over the weekend and it was amazing.
Pretty sure 95% of the redfish I catch from here on out will be left on the half shell.
Thanks Bluffer and Paul Prudhomme for the recipe and the spices, looking forwards to the next time. |

Reds on the half shell are the way to go. I season the fillets and throw them on the grill and cook scale side down until the meat starts turning white in the thickest part of the fillet. Then I slide them off the grill and onto a cookie sheet and add some home made pico that has red onions and mangos to the mix. Let the pico heat up a little and then pull them off and cover with fresh avocado slices.
