This was the best brisket I have ever eaten in my life. It was a little pricy but worth every penny. I cooked it hot and fast. 350 uncovered for 2 1/2hrs then covered in a foil pan for 1 1/2hrs. I rested it in an ice chest for 3 hrs then cut it. The brisket was marbled like a ribeye.

It was a heartbrandbeef brisket. If you order from their website you can get 2 for $230 plus shipping. You can get the same brisket but just 1 from SAMs club online for $98. I ordered from SAMs. Later I found out that Eddie Packing in Yoakum is the distributor and I went there and got 2 for $130. It was $5/lb. big savings for a 40 min drive for me. They may cost more but I do a lot of cook offs and if I am trying to win thousands of dollars, it is worth it.

Good info. I'm gonna have to give it a try at my next brisket cook-off.

Found one locally for 7.99/lb. Gonna prepare it over the Easter weekend. Mine goes 17 pounds.

How much did the one you prepared weigh?

Wagyu = Cheating.

Thanks txluke for all the great info. Followed your posted recipe. I got tons of "this is d@mn good brisket, and several "this is the best brisket I have ever tasted". Very Happy

Glad it worked out for you. I love the recipe because you don't have to tend to a fire forever. 4 hrs. 2 1/2 if you just use the oven after you wrap it.

Saratoga Store had two I bought the big one. It folded in half in my cart and was hard to see which side was which as there was no big fat knob on the normal side.

I am a little sad that it is getting so easy to get good briskets. I thought I had a little edge on the others at competitions.

Funny....but true.

I'm competing in a small competition this weekend. I don't the competition is going to be really that tough, so I am going with a $3/lb. brisket to keep it interesting. Save the rest of the budget for some suds. Very Happy
