I assume this might be Mexican cuisine. Does anyone know how this is prepared? I am thinking some sort of soup. These were offered at the HEB on Weber at Holly.

I have never been a fan of lambs head soup. You sure it's not a cajun dish of some sort, through in some creepy crawlers and some mudbugs you might have yourself a dish. Very Happy

Lamb's head is featured dish in many cultures.
In Iceland it is salted, aged then boiled (svio), or seared.
In Norway it is boiled and traditionally served around Christmas (smalahove).
Many Middle Eastern countries roast it. It is called "pacha".
Roasted lamb's head is also popular item in Italy (capozzelli) and in Greece it is favored around Easter time.

Smart move on HEB's part putting it out as it could appeal to a lot of folks.

Hey Tyler, keep it simple.

Put head in some heavy duty aluminum foil. Sprinkle salt, pepper, Garlic, maybe put a bay leaf on top of it. Wrap it up and set in a pan just in case your aluminum springs a leak.

Cook at 250 for about 4 hours. Low and slow moist heat is the object. Check it. If the meat is falling off the bones it is done.

The cheek meat is the best.
Peel the outer layer off the tongue, shred the tongue and eat in a taco.
My mom used to eat the eyeballs, but I was never one to try it. I hear they are vey tasty.

Then, break open the head and get at the brains. Creamy and delicious.

we raise a few sheep.
they are the most full of snot animals I've ever seen.

I have eaten a lot of exotic food but i don't think i have gotten hungry enough to try the lamb's head. Might be awesome but I can't get past the look.

Growing up, my mom would cook up a bunch so we each had our own head to attack.

Think of barbacoa. Except here, you have access to all the different pieces. Trade you two eyes for a tongue....

There's a video on youtube of a guy preparing it and first he bangs the head on a cutting board to get the snot out! Smile
