See a lot of goats around but never any cabrito for sale. Of course the only place that I've looked is HEB.
Back many years ago, when I lived in the Valley, used to love going to Progreso and having the Cabrito there. That said, I personally have never cooked it. So any prep,and cooking ideas are welcome.

Used to love the cabrito in Progreso at La Fogata roasting there out front on mesquite coals. The food went way down there and they eventually closed.

HEB usually carries cabrito around Easter.

I just hate he way they scream when you hang them upside down and slit their throats. blehhhhhhhhhhhh, blehhhhhhhhhhhhh, I will never do that anymore.

A .22 round has solved that for those of us who hate that as much as you do, but still need that cabrito fix. Goat went up many notches in my book when you could hang a Boer instead of a Spanish.

Is Easter the only time you can find cabrito ? Is there a local meat market that carries it?

The HEB on the bluff had some cabrito a couple days ago. Only problem is it is expensive as hell. I didn't pay much attention because I wasn't in the market for it, but it looked like a small front quarter, maybe front half, but it was around 60 bucks! I didn't look at the weight, but it sure didn't look like much meat for the price. I'd like to give making it a try, but its gonna need to cost less than that.

I bet the Michoacana on ayers either has it, or can get it.

Do like cabrito, but the price will have to be right, it is not so good that I will pay premium for it. Maybe my next trip to Progreso, or Reynosa.
