I've made what I think is my best ceviche ever using a mixture of pompano and whiting. My better half also bakes whiting after covering it in lemon juice and cilantro. It's all around great stuff. I've also cooked scaled bait-sized whiting in the microwave before, with a little lemon and pepper rubbed into shallow vertical slices.

Whiting is an overall good fish... Better fried than baked I think. Bighead is right about it being a bit mushy when baked, but still pretty good.

Ceviche is good stuff. I used to mix fresh snapper, regular pico, mango pico and the juice together offshore. I'd let it sit a few hours and eat it on the way back. Freaking ridiculously good.

We caught a dozen off the rocks at the fish pass Saturday afternoon. Went to the house and fried them and had fish tacos with leftovers the next day for lunch. Would have never considered eating them when I was growing up.

Whiting are our favorite fish to eat, very mild, white and flakey when fried.

I've often asked the same question friend. People are strange sometimes: can you imagine a pride of lions getting ready to chow down on a fresh Zebra and one thinks to itself "I wish it didn't taste like ZEBRA"!!!!! Laughing Cool

Seriously though, whiting saved plenty an otherwise fish less and food less trip when I was a kid down there. Not real exciting to catch, kind of like a crappie wallowing around on the way in.

Also, ceviche is right up there with my top three things to eat....... Along with good fried fish and really good mesquite grilled fish! Very Happy

I think it may be like gamey meat. Fresh fish is not fishy. It's good!

I don't like fishy tasting fish either what is so wrong with that??? I remove lateral red lines from my fillets to reduce the taste, I also remove the Shiet vein on the shrimp even though "Manly Men" tell me to leave it on that it wont kill me. I also season beef and marinade it as well to remove the "cow" taste. I like light beers but drink plenty of tequila.
I don't know about you guys but I also enjoy using deodorant and showering as well to remove "natural" scents. Exclamation Exclamation Exclamation

To me making ceviche is about trying to take the fishy flavor away from fish.. I could eat whiting raw aka sushi if I wanted... I like the ceviche as a snack and it reminds me of chillin at las hamacas del mayor at Pasquales.....
