Okay so my daughter and I came up with something fun to do with the boneless chicken thigh meat we had in the freezer. In past posts you've seen poblano cheese chicken sausage. This time we added a thanksgiving flair to it and included poultry seasoning, some pepperidge farm season stuffing bread crumbs, craisins, black pepper, red pepper flakes, Tony c seasoning and goat cheese.

Then we made paddies and tasted for seasoning before putting into casings.

It was damn good!
