Saute one chopped shallot, one chopped serrano together in 2 tablespoons olive oil until soft. Add 3 cloves chopped garlic and reduce heat. Cool mixture. Add mixture to half a bottle caesar dressing(I use Newman's) and a 1/2 cup of parmesan cheese.

Wrap some chicharrons in foil and heat up either on the grill or in the oven. Reserve these for the croutons.

Cut romaine hearts down the center, leaving the core attached, so it all stays connected. Drizzle with olive oil and season with salt and pepper. Grill over medium high heat for about 1 minute on each side. Try to just get a mark on each side.

Dust oyters with seasoned flour and flash fry in hot oil. Remove and dry on paper towels.

Don't chop the lettuce when you put it together. Ladel some dressing over the half piece of romaine, sprinkle some more parmesan on top. Sprinkle with a handful of the chicharrons/croutons. Top with the hot fried oysters.

Made this last night as a first course to steak and frys. Dang it was good.
