So while thinking of things I want to cook, I had a little brain fart about some ceviche! I'm not sure if it's something that's done all the time but would a pineapple and/or mango pico de gallo ceviche be good? It sounds great in my mind! I have some speck fillets in saltwater in the freezer from march, do y'all think these would be okay for ceviche or should I get some tuna or grouper from HEB??? Thanks for the input and I'll post up a pic of how it is!!!

Well, I don't take pictures of my food unless I just caught it, but Hell Yes! I mix half and half regular and mango pico. It's awesome. Make sure you use fresh fruit, no juice from a plastic container. It's cheap enough so that you should make some with your frozen trout. If it sucks, then go buy some fresh fish. I've never tried pineapple ceviche but I bet it's awesome too.

Shoot yeah you can use mango and pineapple in ceviche. If you want something a little different, throw some cocunut milk in there too. And don't forget the avocado at the end.

we were having a little gathering in the Bluff a few yrs back and another guest from I-side showed up w/some trout cevich....
dang good stuff....
dont remember all the ingredients,, but "lotsa red and white' Laughing Laughing Laughing "
as long as there's an acidic ingredient, prolly all else is up for grabs...
so who's up for some drum/agarita ceviche?
or flounder/ mustang grape?
those sour oranges that grow in SoTx oughtta be the ticket....
also someone needs to add a few fresh,young nopalitos to a springtime mix...
fresh garden tomatos ..
and if yall want a sweet type...
purple pear tunas..
or Hill Country peaches...
early Feb pomp... wilt some Winter Garden spinach in evoo and add to the oinons an' such...

Haha this is true! The idea first came up of marinating a tuna steak in pineapple juice and searing it and serving it with the pico but then I figured hah what the heck! I'd like a ceviche more!!! And thank y'all for the input! Is ceviche usually served in tortillas or tortilla chips or is usually just ate with a spoon or fork? And the coconut idea sounds incredible!!! Maybe with a few shreds of a fresh coconut on top??? Wow, my mouth is already watering!!!

Avocado definitely a must.

Zesting an orange also adds tons of flavor.

Tomatillos are a good addition as well.

Well guys, the ceviche is a no go for this round. I set the fish out to that and made the call to my stepdad to pick up the stuff from the store an he couldn't do it today. Now that the fish is thawed, I don't think if I get the ceviche made either today or tomorrow, the fish wouldn't be any good. Looks like I'm baking it this time!

grill that tuna w/evoo and garlic salt and fresh blk pepper. or pan sear.
dont marinate in citrus (done that).
use white flesh fish for ceviche.

There was a recipe in the back of the last issue of Texas Saltwater Angler, actually several ceviche recipes. One of them was mango/pineapple. It looked FANTASTIC!

Well, I finally got the opportunity to make a ceviche and decided to go with Mahi Mahi as the fish in the ceviche! I used pineapple, mango, jalepe
