Just did a turkey for pot luck at work and its good! Definetely doing this for T-Day. Cant take credit for the brine, read about it on the net... but its good.
10 lb HEB Turkey
2 gallons HEB natural craneberry cocktail
2 cups kosher salt
***mix 1 cup kosher salt per gallon of Craneberry juice,larger birds will take more to cover ***
Mix brine well and submerge turkey in, put in fridge 10-12 hrs.
Pull from brine and wash with water, rub vegetable oil on bird and put on some Fiesta Pork rib seasoning (thats the brand I like, use your fav)Put in smoker 225-250 degree and cook to 160 degrees in thickest part of breast, pull turkey off pit and wrap in foil then wrap in a towel and set in an ice chest(no ice) for an hour.
Unwrap and slice |

That sounds really interesting.
This year I did a citrus brine. Mainly orange, lime and lemon juice with fresh rosemary. Everyone loved it, although I was looking for the citrus but never found it in the finished product. _________________
