I just cooked up some Red Head breast filets that were very good.
This is probably a variation of an old recipe, but it worked well tonight on the fresh breast filets from last nights harvest.
Soak the filets in milk overnight or 24 hours....
Rinse the filets in water to remove all the milk and blood.
Season with your favorite seasoning ( i used Montreal steak seasoning)
Prepare a basting sauce that consists of equal parts butter or margerine and worcestershire sauce. Add pepper, salt, and garlic powder.
Cook on the gas grill with medium heat.
Turn the filets and baste until done. Don't overcook. |

| marinate just like you said then roll them up and wrap them with bacon just like a fillet. |

I did some Speckled Belly geese breast fillets in a similar fashon that turned out really good. I marinated them over night in a sauce blend of Kikkoman Soysauce, McCormac 7 pepper blend, brown sugar, olive oil, and lemon juice before grilling them over a "hot" bed of coals for 6 minutes per side keeping them brushed lightly with the same marinade. Hey Drake, hope everything is going well for you up there... Any duck hunts yet?
I would have wrapped them in bacon, but we didn't have any, and I didn't feel like driving to HEB or paying $5 for a package at the corner store.....
Tyler, up till now, I always thought that Redheads were in-edible. The milk seems to draw out most of the gamey flavor. I like mine medium but not medium rare. Good birds like teal or wood duck are a different story, however.
Tonight we had stewed doves in a crock pot. No store bought meat for over a week now...... |

Try soaking in saltwater for a few hours before the milk. Really helps get rid of most of the blood. _________________ "Ya'll must eat a lot of fish" |

I cut the redhead breasts into strips and soaked overnight in a brine with some cider vinegar, then rinsed with fresh water and then marinated in red wine overnight.
Then I dusted the pieces with flour and sauteed in a pan of olive oil and butter and put them in a stew with onions, potatoes, corn and peas. Not inedible but tasted like livery dove. _________________ Like Corpusfishing.com on Facebook! |

a vinegar-ice water mix takes the stank outa snows and shovelheads...
we've grilled split goose and duck breasts wraped around the standard onion and jalapeno slice. and of course anything w/ bacon added is a pluse. _________________ the creepy uncle that scares the kids.... |

Rio... going well cold but well.
We killed 54 Mallards, Gadwall and teal opening weekend and an even 60 the last weekend. We are holding more ducks at the farm than we have in the last 10 years. Some of the guys have said they have seen ducks working back up looking for food. Maybe the drought didn't leave much for anything to eat.
I was out at the house the weekend before quacker smacking started in AR. I caught some nice flounder and trout I will be back the weekend of the split.
If you can get to Ft Smith this year we can put you on the ducks. PM me your email I will send you some picks of stacked green heads. |
