Now myself, like many others may have had a bit of a stigma toward eating kings, but Carolina Kingfisher let me in on his methods, and I had to share, it's pretty damn tasty:
I caught a small/med size king on friday and filleted er out, didn't freeze, next day cut the fillets into frying chunks and marinated all in a LOT of Texas Pete's Hotsauce for a few hrs. leave sauce on and
Rolled in my cornmeal, (no added spice necessary, no salt at all as the hot sauce has salt) and fryed in peanut oil 365 f
I was really impressed and probably ate my month's allowance in about 20 minutes hahahaha, btw you can eat cilantro to "chelate" heavy metals from your system, and this is proven. |

Agree x2!! Carolina Kinger is a good friend of mine.....fish with him every weekend. I took his recipe and stuck with it.....never had king fish that tasted so good in my life. So now every time i get a king, thats the recipe i use!!! This season alone i have caught upwards to close to 30 kings from Bob Hall since May.....and thats not fishing at all from june to july due to the water being chocolate milk for a month. _________________ D. I hope you haven't eaten thirty kingfish this year. That's a lot of mercury.

Chemical of Concern: Mercury
* King mackerel greater than 43 inches in total length should not be consumed.
* For king mackerel 37 to 43 inches in total length:
Adults should limit consumption to no more than one, 8-ounce meal per week.
Women of child-bearing age and children should limit consumption to not more than one, 8-ounce meal per month.
* King mackerel less than 37 inches in total length are safe for unrestricted consumption.

Seeking a good home made cornbread recipe? Looking for a good home made cornbread recipe that includes corn as an ingredient. Also, does anyone have one for cornbread made in a slow cooker?

Mom's Cornbread Recipe
2 cups self rising cornmeal (I like the white cornmeal)
1 cup self rising flour
1 Tablespoon Sugar
1/4 cup Oil OR 2 rounded Tablespoons mayonnaise (yes, mayonnaise)
Add water to mix to a pudding consistency. Beat with spoon about 5 minutes.
Pour into a slightly greased hot pan (I use a cast iron skillet)
Bake at 475-500 degree until the top is golden brown.
For the Jalapeno/Cranberry Muffins
Use the recipe above or your favorite cornbread muffin mix.
Mix according to the directions then add chopped Jalapeno (as little or as much depending on how spicy you like it then toss in a handfull of dried cranberries.
It has a great sweet hot flavor that goes great with stews, chili just about anything. When I was a personal chef I always made them to go with my White Chicken Chili!
