Just got me a nice evenly distributed 13 pounder from the heeb. Normally I smoke'em low and slow, but I am going to try higher temps for 5 or 6 hours in the wood burning oven and see what happens.

I BBQ directly over mesquite coals...
gotta watch the temps closely... used a thermometer last time and had 250-350 depending on freshening the coals. turned 'em a few times and lotsa vinegar/fat sop to keep 'em moist...
labor intensive, but when I'm q'in'I make sure to stay hydrated Very Happy and my brisket is great. I like 12lb and under and they go about 6 hrs and melt in yer mouth tender.
