ok well i need a good shrimp and scallop reciepe. i have a charcoal, gas, and smoker and of course a oven and stove top any ideas guys?  |

anytime you got seafood and a grill and are stuck for ideas, think pig. Wrap 'em up in bacon, stick em on a skewer, you can baste them with a store bought asian glaze or just sprinkle them with a bbq or spicy cajun seasoning. Some people like to do the shrimp with some creamcheese around them first, then bacon. Thats great too. Just put em on the grill till the bacon crisps up, by then the seafood is fully cooked, thats it. Take the abductor muscle off the scallops. Dry them off. Salt & pepper. Sear on a hot skillet for 2-3 minutes a side with just a little oil. Don't move the scallops once they hit the pan. Let then develop a crust, peek at one underneath should be turning golden brown. Remove from pan and add chopped garlic, lemon juice and splash of white wine to the pan with a pad or two of butter. Saute for a minute (don't burn the garlic). pour that over the scallops.Mmm,Mmm,good.
Try it with some avocado in the sauce. I use lemon zest in the sauce often also. Use whatever citrus you want. Use some dried spices like oregano or basil. Spice it up with some chili. Just don't overpower the light flavor of the scallop.

It's hard to beat bacon wrapped shrimp Itorna, but try half cooking the bacon first. I find it doesn't overcook the shrimp. Stuff them whatever you want. It's all good... _________________ I don't run 'cause it makes me tired. I don't lift weights 'cause they're heavy. -Charles Barkley |

Here's how they do them at the restaurant I work at.
Grill the scallops to medium.
Rub with a liberal amount of jerk seasoning.
Serve with pepperjack grits.

| Gumbo is always good ! ok i got a couple of things for yall to try !! If you like Shrimp Scampi try this!!!! take a frying pan big enough so all will sit in single layer and cook !! melt in a couple sticks of butter u want plenty !!! throw in shirm and scallops cook for 2 mins then turn over shake on some lemonpepper!!! now here is what your gonna say WTF !!! until u try it , crush up a bag of sourcream and onion potato chips enough to cover all well mix and stir in with butter and shrimp/scallops serve and eat !!!!!!!!!!! Man its good !!!!! ok everyone say this guy is crazy but after you try it you will always do it !!!!!!!!!!!!!if you like cheese you can cover with the mexican white cheese!!!!!!! OOOHHH MAN!!!!!! or put a can of rotel in the pan heat and simmer for a while to mix flavors well!!! dump in seafood and shake in some lemonpepper and heat and mix for 4 or 5 mins till seafood is done top with cheese and serve OOOOHHHHH!!!!! MAN !!!! |
