Anybody have any good recipes for jack? I filleted a 13 lb. jack today and will use the head portions for hubby & make soup from the bones & tail, but need some recipes for all those nice fileted portions that I save for guests....watcha got??

[Pro Tip - Do This Recipe Outside as Jacks tend to have a fishy smell when cooking]

Fill a turkey roaster size pot with water, and bring to a boil.
Squeeze 2-3 lemons and add juice & rinds to the pot.
Add 2 tablespoons of whole peppercorns.
Generous portion of Himalayan Pink salt.

Add fish to the pot and boil for 10 minutes.
Use a strainer, and pull the flesh out of the boil and toss it in the compost bin.
Find a nearby fire ant hill, and dump the boiling water on the ants!

2 problems solved at once. You're Welcome.
