Use any white fleshed fish. Snapper and trout work very well. While pan is heating up on medium, dust fillets in seasoned flour. I like to season with pepper and Tony's or Lawry's salt. Add oil and butter enough to coat the bottom of the pan. Put the fish in and cook until brown on one side then flip over. Make sure you don't overcook it. Take the fish out then put in two finely diced shallots and add in lemon slices about one whole lemon. I like meyer lemon if you can find them. Once the shallots start to look translucent and getting browned up with the bit left from frying, deglaze the pan with a glass of white wine( You can add more or less if you want more sauce) and the juice of one lemon. Add a third of a cup of capers or whatever amount you like. Add more butter and let that reduce until the sauce gets thick and shiny. I keep the fish warm on a warming burner and then pour the sauce over the top.

Looks really good. How about some snapper Cacciatore, flounder Parmesan, and grouper Marsala next?????? _________________ Now that food has replaced my sex life I can't even get into my own pants!!!!!!!!
Even duct tape can't fix stupid ... but it can muffle the sound!!! |
