If you have a serious addiction to B and J's Jack's Wings this may help you out between visits.
Air fryers do a pretty good job but you can only do a couple of batches of six. I went the cheap route and bought nine whole wings for 6.50 and that made 9 flats and 9 drummettes.

First I made the sauce using Franks Red Hot Original (not the wing sauce) about a half cup, 3 Tbl bottled garlic, some ghee 2 Tbl ( clarified butter for Skipper and the Flour Bluffians), two or three shots of sriracha, and hot pepper flakes. Just wing it till you like the taste.



I set our oven to 425 on convection. After a dusting with Tony Cachere's I let them go for 25 minutes.



I turned them over and let them go another five minutes. After that I took them out and spooned over the sauce on to the tops of each wing piece and put them under the broiler at the second level from the top for 5 minutes. Then flipped them over and hit the other side with sauce. Here they are waiting to go in for the last time.



This time I set the pan on the first rung below the broiler and let them go for 2.5 more minutes until I saw a little charring here and there. Be careful and watch them.



Add ranch or blue cheese dressing and you've got it made. Okay so an IPA would go great with it too!
