Used the Anova machine for four hours at 131 on these chuck eyes I bought for 5.99 per pound at Staples Street Market.



Here's what they look like after 4 hrs in a vacuum sealed bag.



On to the Weber for 2 minutes a side just for a good char on the outside for some crust.



And the finished product! These were really tender and flavorful.

Tyler, have you sous vide vegetables yet? They retain flavors and nutrients in a different, but good way....

No I haven't! I will have to try doing that. Also we have found that the Chuck Eyes do best at 129 degrees for four or five hours then flash cooled in ice water then patted dry and seasoned and tossed on a hot grill.
