| I grew up eating hickory smoked brisket at Sonny Bryan's in Dallas. I used hickory on my own brisket for most of my life. Then I experimented with pear, apple, pecan and like most folks, I used what I could find. I moved to east Texas and discovered walnut. It's all I ever use now and wonder why I have never heard of anyone using walnut. I guess it's because it's hard to find. Now, every time I walk past the smoker even when it's cold, I smell that walnut and get a craving for brisket. L |

Most of the best rated BBQ joints such as Franklin's, Coopers, etc..., use oak exclusively. _________________ Now that food has replaced my sex life I can't even get into my own pants!!!!!!!!

When I grill, I like to use mesquite.
When I smoke, I use oak though sometimes I throw in a stick of mesquite a few times to punch things up.
Every now and then I grill with hickory to change things up.
