first off, I have NO Irish blood... but since we celebrate Oktoberfest for several weeks (myTuetonic heritage) today I decided to be Irish...
so...
baked a corned beef for several hrs
slow process, but tasty...
potatos and carrots w/a parsley/lemon sauce...
grilled and beer-steamed cabbage w/a balsalmic syrup glaze...
I have a couple of Guinness' on hand and a wee portion ( Very Happy ) of Irish whiskey...

Your recipe sound delicious.
Tried "Cornbeef & Cabbage " myself. Like you I'm not vey Irish but I'm very international when it comes to dining.
Was amazed how little Cornbeef I got fron 2 1/2lbs. It really cooks down.
For my first time at it I was pleased. Will try again but with more meat.
