Well, the ingredients tradition to the roll are hard to argue with. I'm always looking for alternatives.

Lately, shifting away from soy sauce and wasabi to mayo and schiracchi (sp) for lower sodium.

Anyhoo, I have used or thinking about:

Super ripe Jalapenos, red in color the better,
Water chestnut (for crunch),
Sour cream (google search, but wonder),

Have always loved the fresh catch of the day, but fishing for ideas.

Have you tried mixing the sour cream with fresh fish roe? The mix is great for stuffing jalape
