How do you fillet this kind of fish? Honestly I have never skinned one of this variety. Colorful little booger.

I usually fillet those using a bench top band saw!!!! Very Happy

I think I will mount it. That doesn't sound right. I think I will have it mounted. Hmmmm..... I'm going to hang it on the wall.

I think that's the elusive "starburst" fish. Pretty rare around these parts. It deserves to definitely go up on the wall !!!

Thats a rare catch...i remember my late uncle catching one of those around sabine pass years ago on a plum chartreuse wood chip..or maybe not...lol

I usually fry those whole. Takes awhile, but they'll crisp up eventually.
