It is my understanding that when crab are caught they must be kept alive until cooking them.

I have also heard one can throw them immediately on ice.

The reason for it I was told is because crabs can or will inject themselves with something that can or will make humans sick.

Is there any truth to this? Is it an old tale?

Any help appreciated.

I keep them iced down real good to keep them alive, they stay alive longer on ice and are easier to handle when cold.

You want them alive just like any other shellfish because of bacteria.

I put ice in my ice chest and put a layer of newspapers over the ice. The crabs go on top, out of the thawing fresh water. Same with oysters.

We always would catch them, and put them in a mix of clean water, some salt, and ice, and let them stay in the ice water for a full 48 hours before cooking them, moving them between two ice coolers with fresh water and ice several times. This allows the crabs to purge all of the sand and mud from their systems before you cook them.

Steam them do not boil them. All the best crab places steam their crab.
