any body know who makes the best electric knife sharpener is? and where I can find one I don't want to spend more then $200ish but I would like one that can really put an edge on a blade especially on my fillet knifes. I have done it by hand since I was a kid and I am honestly just tired of doing it (getting lazy). Any help would be greatly appreciated!!!

It depends. Then again, most everything does.

If you want to take a couple of quick swipes and go, Tyler's choice works fine.

If you want a little more control and the ability to customize edge angles, sharpen chisels, etc. something like a Tormek is a better choice.

If you want a do it all tool buy a belt grinder and you can sharpen, grind, polish, sand, and trim your fingernails all on one machine. This is by far the most used tool in my shop...and yes it sharpens knives too.

I'm with cdhknives! All my life I've used Arkansas stones to keep really good edges on knives. Then, for some undetermined reason, I thought I needed an electric sharpener. The Chef's Choice I bought was used twice before I gave it away. That sucker can ruin a knife quicker than you can say "Dang it!" It takes way too much steel off the blade and you have no control over the angle/type of edge you get.

After some more research I bought a 1" belt sander and now have sharp knives again. You can get the belt sander for less than $60 at a place like Harbor Freight. Belts are readily available from lots of online sources. I have 300, 400, 600, and 800 grit, plus a leather honing belt and compound. It'll handle everything from an axe to the finest fillet knife, and, literally, give you an edge you can shave with. For us occasional users who aren't using the machine in the shop every day, a cheap belt sander serves just a well as the more expensive "sharpening" equipment.

Just my $.02 worth..........

lol... just the opposite here... I love the chefs choice sharpener... and really messed up a blade w/belt sander...(there was beer, tho.)

I messed up my fair share every time I 'learned' a new sharpening method. Once you get the hang of using the belt grinder it allows you to use different angles for different blades just like a stone. Actually is is exactly like a power operated stone...but that power means that both good and bad gets multiplied.

My little 1x30" works but it is so fast you have to use a really light touch, both to keep from overheating the steel and from taking off too much metal. My big 2x72" has 3 step pulleys allowing me to slow it way down. That greatly improves my sharpening. The ability to use everything from 36 to 2000 grit belts (in many many different types of abrasive, from plain aluminum oxide to zirconia to engineered ceramics) adds enormous versatility that is very hard to get with any other tool. Slack belt work to get a convex edge is also quite straightforward with the big belt grinders...but that is more useful for chopping blades IMO.

Still, the end result is what counts. As with most anything, there are usually more than 1 or 2 ways to achieve the same end result.

Get a $70 work sharp and spend other $130 on a lifetime supply of belts. I use the 800, 1800, and 6000 grit, and can shave with any knife in my house...
