I got an electric smoker for Christmas...first time smoker owner. Dad always did briskets and such on the pit, but that is pretty much over for me living on corrosive Padre Island.

Do y'all make your own chips for smokers or buy them?

I was hacking on some scrap mesquite to get chips for mine, but decided that was NO fun. Maybe I should fire up the bandsaw and just cut chunks...but what size to make sure the water soaks in but they don't burn out too fast?

Any rules of thumb?

HEB sells all kinds of chips including my favorite for fish - Alder!

Yeah, I have a garage full of scraps of pecan and mesquite, but I'd like to try some of the northern fruit woods like apple and I guess I'd have to buy them.

Ty.. I used that on the salmon last yr...
just bought a bag of apple to smoke cheese... it's 1.87 a bag

I cut mesquite limbs into 1 inch wide rounds and use just like that. Works great.

If you are going to do some red meat or pork, give the Jack Daniel's wood chips a try. They are wonderful. I get mine at Academy.
