We've got the oil from Thanksgiving and wondered what domestic goose would be like since it has a lot of fat.

I would be afraid of losing too much fat. Best part IMO. No way am I paying 40 bucks for a goose if I'm not even going to get the rendered fat for a roux, pan fried potatoes, eggs, stuffing, etc.

Good point! The 11.9lber I looked at just now at HEB was $68.75

I've cooked several. I start by steaming the goose to cook and render it. Then it goes into the hot oil to crisp up the skin.

Susie thinks we settled on roasting the goose after we steamed it. It has been a long time.
