Ingredients

1. 6 Pompano Fillets - blood line and bones removed.

2. Whole Stick of Salted Butter

3. Zatarain's Big and Zesty Creole Seasoning ( As much as you like)

4. Heavy Whipping Cream - ( 1/2 cup to 1 cup) & 1 Tablespoon of white Flour

5. 1 cup long grain white rice





Meathod:

1. Melt butter in a medium frying pan

2. Season both sides of the Pompano Fillets and add to the melted butter at a medium setting

3. cook both sides of the fillets until light redish brown and firm

4. Drain the butter and seasoning drippings into a small sauce pan and add the whipping cream and tablespoon of white flour. Whisk and simmer until sauce thickens then removes from heat.......

5. While the Pomps are cooking add 1 cup of rice to 2 cups water and a pinch of salt... Bring to boil then to simmer until water is gone and rice is cooked.

6. Add a few Pomp Fillets to a plate along with some scoops of rice and then drench with the sauce...
