It's a little nippy in the air up here so:
Brown 4lbs chili ground beef, add 1 package chorizo de san manuel and cook for 5 minutes. When everything is nice and browned add 1 can tomato paste, 4 tablespoons chili powder, 1 package chili seasoning(I use McCormicks), 1 tablespoon each of cayenne, paprika, cumin, lemon pepper, oregano, and black pepper, 1/4 cup brown sugar, and 2 tablespoons salt. Stir together and cook for 4 or 5 minutes. Chop and add 4 medium onions, 1 medium shallot, 1 head of garlic, 2 jalapenos, 1 serrano, and 1 roasted poblano. Stir together then add 1 bottle of Guiness, 6 cups beef stock, 1 cup strong coffee, 1 large can diced tomatoes, 2 chopped fresh tomatoes. Bring this all up to a good simmer, then reduce temp to low.
In another pan I slowly render fat from 1lb of cut bacon pieces. When it's about half done I take hot italian sausages and pinch them into mini meatballs (say 5 to a link). They come out of the casing very easily. Brown those little meatballs in the bacon fat, turning two or three times to get good color all over. Add a little beer if it looks like it needs some liquid. When done, drain most of the fat and dump the meatballs right into the chili.
The chili turns out great (very meaty and spicy) and you get little meatball surprises. _________________ 1.2.3,4,5. once i caught a fish alive.

Wow! My wife made that for us lst night and it was a hit with everyone! Thanks for a great recipe. Only changes were venison for beef and chile pequin for cayenne.

Wow that sounds great. However I live in a family full of females who do not use the entire range of their taste buds.
