Will post up the recipe if it comes out as good as I hope, but I roasted some corn, red onion, red bell pepper, jalapenos, and a couple of poblanos. Once it cooled, I mixed it up with some diced cherry tomatoes, black beans, lime juice, fresh cilantro, salt/pepper, and a touch of comino.
In a separate dish, minced leeks, lime juice, and some fish and let that sit for a few hours.
My plan is to mix it all up and serve with chips tonight..... We shall see.

Post Dinner Reviews:
Got the ultimate compliment around our house. From one of the kids, "It doesn't suck" (That's an inside joke in the family, but a high compliment)
The mix made for quite the colorful dish.
And the final presentation.
The poor picture quality on my part doesn't do it justice, but it was great tasting. Perfect mix of flavors, and anytime you can mix in some ceviche, life is good!

Luckily, most of it came out of the back yard. Only the corn, beans, and comino had to come from the H-E-B.  |

Now for the recipe:
Roast on a hot pit:
- 6 ears of corn (rolled slowly for the grill-marks, then wrapped in foil to cook)
- 1 red bell pepper
- 3 jalapenos
- 2 poblanos
- 1/2 a red onion (sliced in half, just grill the flat side to caramelize)
Set aside to cool.
- Once cool, skin and removes seeds and veins of the peppers. Chop everything finely.
- Cut corn off the cobs and run the knife along the cobs to get some of the "milk".
Ceviche:
- 'ol standby of whiting (but use whatever you have on hand) - cut into cubes
- other 1/2 of the red onion, diced fine
- 2 medium leeks, chopped fine (with some of the greens)
- chopped cilantro
- enough lime juice to cover everything
- 1/2 tsp. salt
Mix and leave in the fridge for 6 hours, stirring occasionally.
In a large bowl add:
- 1/2 can of black beans (drained)
- 2 Tbsp. extra virgin olive oil
- 2 Tbsp. lime juice
- dozen or so cherry tomatoes - diced
- Chopped cilantro (to taste - We like it, so add alot!!)
- Cooled peppers/corn mix
- Ceviche (drained of the initial lime juice mix)
- Salt/pepper to taste
- tsp. of comino
Serve over chips/ topped with sliced avocados!!! (Slap 'Yo Mama after the first few bites )
I also made some Queso Blanco w/ Chorizo to go along with the chips.
As I mentioned earlier, "It didn't suck"!!!  |
