I brined, then smoked, a 14 pound brisket last weekend. I smoke the whole brisket at 250 degrees for 24 hours, then take the tip off and reapply seasoning and smoke the tip for 6 more hours. The tip then was chopped up with a small amount of poblano bbq sauce(homemade). Pretty simple after that: 2 slices of buttered bread, 2 pieces of Kraft american chz, the brisket in the middle of everything, and grilled in a non-stick pan.
It's like food Nirvana.

I know it's a simple recipe, but I'm sure there are plenty of briskets being cooked in South Texas this and every weekend. Try it, you can thank me later.
Did I mention it's like Nirvana...?

The last sandbar connecting corpus bay and upper laguna madre is my favorite place to fish. Lots of trout and reds and occasionally a flounder and black drum. I'll get back to you with the sauce recipe. I never measure the amounts when I'm making it, but I'll try to remember the next time.
