"Double Beatloaf" being an homage to Ralphie's little brother in "A Christmas Story" who hates meatloaf and calls it "Double Beatloaf" You'll like this one,

Starts with one an a half poblano peppers and an onion or two. I had some red onions that needed to get used up and a tiny yellow onion I diced and sauteed with the poblanos.



Then I took my 2.7lbs of ground feral hog and mixed it with a pound of organic grass fed beef the Mrs. got on markdown at Sprouts.



Next I mixed almost a sleeve of saltines and two eggs into the meat along with the now cooler sauteed vegetables.



I formed two loaves and put them into a preheated 350 degree oven with the convection fan turned on. About 45 minutes into it I painted the loaves with chipotle ketchup I made mixing Heinz with some chipotle chilis in adobo sauce. I let that run until brown or about another 25 minutes or so and it turned out great.

It was good!. The daughter in law came over for lunch on her break from the Dentist's Office and loved it.

Tyler, that ground hog looks like it has a good bit of fat in it. Is it already cut with something else when it was ground? Looks excellent man.

No it was regular feral hog with bits of hams, trimmings etc. It was a pretty healthy pig!
