Hiya!,
I would like to get people's opinion on Ziplock vacuum freezer bag that uses a hand pump to remove the air and make the vacuum. How long have you hand fish stay fresh in them? _________________ FISH ON!!,

I use them and they do work. Had a couple that wouldn't hold
vacuum, but out of the many I've used, the SNAFU ratio is no
more and maybe less than I've had with the Food Saver. It's
great to be able to seal things air tight without power!!!  _________________ Dave

I have always frozen my fish in water works great taste great never fails. Vacuum bags works great and if you lightly freeze your fillets first they vacuum up very nice without the mess. Those who vacumm bag know what I'm talking about. I tried vacuum bags before and went back to freezing in water because it works to good, for me that is. _________________ I LIKE MINE FRIED. |

Stan, never tried it but if it works for you and others, that's great. My problem is freezer space, and that's where vacuum sealing things really shines!!!
People in the know say that fish should be flash frozen if possible for the best result when thawed...... slowly. Partially freezing and then messing with it, then finishing the freeze doesn't really fit that method, JMO.
Since I started using dry ice to flash freeze my fish AFTER vacuum sealing I've had the best results that I personally have ever tasted. Of course this isn't time and money doable on small batches, but I'm talking about putting up lots of fish after an offshore trip or any trip with a big total catch at one time. _________________ Dave

We have used vacuum bags for many years, like 12 or more, first with a couple of expensive and bulky machines, and now with the simple hand pump.
We think the flesh is firmer and has more flavor than freezing in water.
Fish in vacuum bags freeze faster. City water in CC is normally warm, so it takes longer before the fish are frozen.
We are fanatical about fish preparation. Our fish are iced down immediately after they are unhooked, so we always process ice cold fish. We drop the filets from the cutting board into a bowl of water with ice cubes until we're ready to pack them for the freezer. Then they are drained of water and vacuum bagged.
As already mentioned, the savings in freezer space is also a bonus.
Some reports said vacuum bagged meat keeps longer in the freezer than other methods. But none of the tests were scientific. I think those were opinions of the bag manufacturers. |
