Well, it took many hours and a bath in chicken stock but the Sandhill Crane legs Roadkill Willie gave me to cook up finally softened up. I pulled the meat off of it and mixed in the mole and put the stock back in. It was/is surprisingly good! Worth doing especially if you have a lot.
Here is what it looked like after I had grilled the legs. They were so stiff I could not bend them to get them into the "pool" and as I said it took a really long time.

That looks pretty good!!!
I am going to do my best to shoot some of those crazy looking critters this year. We have lots of them that fly over and land on the lease I just didn't hunt them last year.. |

The breast meat is good. Imagine sirloin fajita meat. It's tasty. You have to purchase a permit to hunt them. I will shoot one if I get the chance. _________________ Like Corpusfishing.com on Facebook! |
