We got a big batch of mole from Puebla, Mx from one of my wife's coworkers, Lupita. We had it in the back of the fridge wrapped up in cellophane. It looked a lot like Trash Heap's avatar. We just bought a new fridge and it made the cut to the new one so we thought we had better use it up. I had mole last at La Fogata in Progreso, Mx and it was done with leg quarters so we did the same. I browned the chicken first and added some chicken stock to the hunk of mole.



Then I tossed the chicken into the pot and covered it and cooked it for an hour or so at 350 or at least until the chicken became tender. It was so good we made another batch of it in the same mole "hot tub".

No kidding it was so good we took that batch of leg quarters out and did another one! We did this back in June. I forgot to post it.

I think the mole was two years old too! It didn't have any mold or funky smells. I guess it was like a good red wine and got better with age.
