Not just for Pizza! Tritip with some salt and pepper, chicken stuffed with lemons, rosemary and garlic, and over-proofed quasi kaiser rolls.

Sliced up the tritip last night, nice and thin and rare, and made pit beef sammiches with the rolls, some horseradish sauce, sliced raw red onion, and of course the left over juice. Good stuff.

The chicken is for today or tomorrow. Well, minus a drumstick that fell victim to the quality control process last night. Smile

Wow that looks good! I like tri tip too! It's big in California and we are finally seeing it regularly at HEB Plus.

If you have a hot BBQ grill with some good direct heat, you are half way there. All you need is a good pizza stone to put on top of the heat.

The pizza stone thing is better than nothing, but, IMO, its a far cry from the real deal. If you decide to take on the task of building one yourself, shoot me a PM. I can tell you some of the things I learned the hard way. One of which is not to put a concrete slab, a couple tons of brickwork, and several cubic yards of vermiculite in the backyard right before you end up buying a new house. Laughing
