Avocado, bacon, tater salad

Ingredients:
1. 5lbs red potatoes cut into 1/2 inch chunks
2. 12 strips thickcut peppered bacon
3. 1 bunch cilantro(chopped)
4. 2 cups mayonaisse, 1 tblsp dijon mustard
5. 10 small avocados
6. 1 head garlic(roasted)
7. 2 bunches green onions(coarsely chopped)
8. 2 serrano peppers(seeded)
9. 3 medium shallots(halved and thinly sliced)
10. 2 or 3 limes
salt, pepper, louisiana hotsauce

Directions:
Boil potatoes being careful not to over cook, drain and cool them thoroughly.
Cook bacon to well done, drain and cool. Roast the garlic head at the same time.
Dice the avocados into 1/2 inch pieces. Add to large bowl: fold in juice of 1 to 2 limes, 1/4 of the cilantro(chopped), and a good shake of salt(avocados like salt). Cover and cool.
To prepare the dressing add the mayo, mustard, roasted garlic, salt, pepper, and hot sauce then blend. Cover and cool.

Only when I'm convinced the potatoes are cooled will I put everything together. If you do it too quick the avocados will just melt and not stay chunky. In a big bowl add the onions, shallots, cilantro,peppers, bacon, and cooled potatoes. Fold together lightly. Start folding in the dressing until you get to a consistancy you like(I usually use most of it). Fold in the avocados last. Be gentle. Once again cover and cool.

This can be eaten immediately, but only gets better as the flavors combine.
I don't mean to brag, but I can only describe this as a masterpiece.

Might cost a small fortune with all those avos, but looks pretty enticing.

I thought the same thing. Looks great, AND it could feed an entire Division! Shocked

I'm thinking about cutting down the recipe size and giving it a whirl..... It's got bacon, mayo, garlic, shallots, and hot sauce!! There is NO WAY it can't be good!!!!! Laughing

That recipe will feed a lot of people. I sometimes also refer to it as '20dollar tater salad' because it's so expensive. It's worth it though and 2 or 3 for a dollar avocados won't be far away.

I cut the amounts in half (except the bacon Twisted Evil ) and tried this yesterday. Delicious, and with only 1.5 large avocados (other half mashed up for the baby) not all that expensive.

I think I might throw a little more acid in there or something else to cut the richness next time. Maybe just more hot sauce. But then again, my wife and I were still full from a big lunch so we just had a small bowl of tater salad for dinner. Nothing on the plate to contrast it - that may have been the issue. I bet this, with a good really vinegary style pulled pork sammich would be nice. I will try it next time.

I really only buy the large avocados when there's a good sale or the small ones are no good. The large ones I've got in the past only yielded about two small avocados worth
but cost about three times the price (if not on sale). Plus if a big one is bad on the inside you lose more than if one of three small ones is bad.

Also, when picking them, I've found the ones with a narrow, elongated tear-drop type shape and smooth skin will usually have smaller pits than the more rounded ones.
