A recipe I created with influence from a dish I learned while bartending at a PF Changs for 6 years, combined with some influence from my chinese step mother's recipe for striped bass.
This recipe is for 16 trout filets (for myself, the 3 roomies, the lady, and some leftovers), but half it to feed 3-4 people.
You will need:
16 small trout filets
3 tablespoons of fresh minced ginger
3 tablespoons of fresh minced garlic
1/4 cup chopped scallions
1/4 cup brown sugar
1/3 cup good soy sauce (I use Tamari, pic below)
1/3 cup water
1 table spoon veggie oil
1/2 teaspoon sesame oil
1/2 teaspoon sesame seeds (optional)
sriracha asian chili sauce, to taste (optional)
1 teaspoon vinegar
Cover two 13x9 rectangular baking pans with foil, spray with pam or lightly grease with oil
place fillets in pain, making sure all filets are equal thickness (fold if needed). Season with salt/pepper, sprinkle ginger, garlic and scallions over the top. Save a little bit (maybe 1/2 teaspoon) of each of these for the sauce. Set fish aside
Sauce:
Mix water, soy, brown sugar, vinegar, sriracha, veggie oil, sesame oil, sesame seeds, and remaining ginger, garlic and scallions in a small bowl or mix right in the measuring cup. Microwave for 1 minute to combine flavors.
Place fish in preheated oven at 350 for 10 minutes. After 10 minutes, pour sauce over fillets, and broil (or bake at 400) 3 minutes more minutes, or until fish just gets flaky. DONT OVERCOOK FISH !!!!

Serve fish with a heaping spoonful of sauce over rice, preferably jasmine or short grain sushi rice.
For a side, stir fry your favorite veggies, starting with onions and adding veggies starting with the firmest and ending with the softest veggies. In the last 2 minutes of stirfry, add another batch of the same sauce you used on the fish.
My favorites include peppers, onions, yellow squash, green beans or snowpeas, bok choy or spinach, and carrots.
