Check this out. They turned out fabulous. You would keep more king mackerel if you tried this. It is the 2nd brine recipe under the tips and recipes page for smoking meat. http://www.corpusfishing.com/smokingfish.htm The best parts are the balls from when you ball out a mackerel. There is a lot of waste but you leave out the red and gray fishy parts doing it like that.

Right on Tyler. Used that same brine recipe but finished it quick on the grill with a sweet/smoky glaze earlier this summer. Didn't ball it out, but I probably will next time.

Great stuff! I love brining and smoking fish, especially the more oily types.
You're right Tyler, if folks would give it a try they'ed eat it more often!
