This is one of the best flounder recipes I have ever had. Hope you enjoy!

8 Flounder filets, split down the middle
7oz can mushrooms chopped
1/4cup chopped onion
3 garlic cloves chopped
1/4cup butter
8oz fresh picked crab meat
1/2 cup seasoned bread crumbs
2 tablespoons snipped parsley
2 tablespoons cilantro
1/2 tsp salt
Dash pepper

3 tablespoons butter
3 tablespoons flour
1/4 tsp salt
Milk
1/3 cup white wine
Swiss or Monterey Jack cheese grated
cayenne pepper

Drain mushrooms and save liquid. In a skillet melt butter and cook onions and garlic for 3 to 5 min but not brown. Stir in mushrooms, flaked crab, bread crumbs, parsley, cilantro, salt and pepper. Mix well into a paste. Form into meatball sized pieces. Wrap the filet around the ball and place in a casserole seam side down.

In a sauce pan melt 3 tablespoons butter. Stir in flour and 1/4 tsp salt. Add enough milk to mushroom liquid to make 1 1/2 cup total liquid. Add to sauce pan with 1/3 cup wine. Cook and stir till it becomes thick and bubbly. Pour over flounder rolls and bake at 400* for about 30 min or till fish flakes easily with fork. Pull out and sprinkle cheese and cayenne over top. Return to oven for about 5 min.
