Caught several of these, any idea what it is? Thanks in advance

If I am not mistaken, that is called a Gulf Toad Fish, there is a little more info on them here:

That's NOT a Monk fish! Here's a link that shows many. Immense is correct, it's a Toadfish. Monkfish don't live in the gulf anyway, they are cold water species of the NW and NE Atlantic.

When they came by the shop and described it I thought it might be a star gazer. Seeing the pics I agree with toad fish.
