Mary and I got to the beach sbh, about 9:30 ish this morning . I have not seen the beach so wide flat smooth in a long long time.



As I started setting up my rods Mary went for a walk as part of her daily physical therapy routine. First rod I set up has shrimp and fish bites and cast it out into the second good. Went back and got another rod holder and started putting it in and the first one goes off. Bring in a nice whiting . Baited it up again, cast it out and finished putting the other rod holder and went back to get the third rod holder. Before getting it in my first rid goes off again. A double whiting hookup. Left that rod out until I set my other two up and cut up one of the whiting for bait put all of them out into the second gut and looked around for mullet. None to be found until roughly 11:00 when the tides were coming in. At that time there were schools of which I was able to cast up and put on my rods. Cut bait and live mullet never got touched all day. When the tide started coming in so did the weed and couldn't keep the lines out in that second gut for very long. Other than whiting I did wind up with a couple of these guys which are going to be dinner. Am going to saute them in butter and then make a sauce using lemon curd, amaretto liqueur, mushrooms and almonds.

Oh man does that look good! I'm hoping everything will still be good next week. Im planning on heading that way.

it's something I came up with one day because I wanted to try fish a different way. everybody that I've made it for just loves it.
After sauteing the fish in butter until it's brown on both sides I remove the fish. I then finally chop up mushrooms and onions and add a little more butter to the pan and saute it until soft. I then put some lemon curd, which you can either make yourself or buy in a store in the jelly aisle, and cook until gets warm. Then add some amaretto liqueur and some almonds and let it simmer for just a little while until warm and if you want it reduced a little bit to reduce it. Then spoon it over the sauteed fillets and enjoy.

Thanks for sharing. I love Amaretto so gonna try this out. Thats one sauce we always have extra of.
