In a word, decadent!!!

Whole pompano, headed&gutted. On parchment paper, so it doesn't stick. Stuff the belly with whole garlic cloves and sliced onions. Slather with some Italian dressing, and wrap the whole thing with bacon. Top with more sliced onions. Smoke over some Applewood.

Oh man does that look good! If I can ever hit it right and catch some pomps again ill try that. My surf trips have been pathetic this year!
