Homemade Lox, made from sockeye salmon, done with Himalayan Pink Salt.

So long as you use some fatty belly flaps of a tuna. It's all about the fat content. The salt draws most of the moisture out, and you are left with a velvety smooth thin slice of strong fish flavor. it's an acquired taste, but done right, it's really good!
