A lot of us are trying to go low carb or Keto (going into ketosis) to lose weight. Sometimes you feel left out especially during the holidays. We made this fauxtato salad using cauliflower. I used my wife's favorite potato salad recipe she got from her Popo. You can roast the cauliflower, steam it, or microwave it. I microwaved a 2.5lb head for about 10 minutes to get it tender Too raw and it stays crunchy and overcooked it gets mushy. I let it cool off and then cut it in half and put it into an ice bath. Then I dried it off when it was cold and broke it into bite sized pieces and tossed it into a bowl with six diced polish dill pickles, about half a red onion diced fine, two stalks celery diced, and two hard boiled eggs chopped fine. Then you add mayonnaise to your liking and pickle juice to taste to give it the right sourness. ( since there is no yellow mustard in it just the vinegar taste of the pickle juice)
It really is good just watch the carbs in the bbq sauce for your brisket.
