Thanks to Deputy Dawg I still have some feral hog in the freezer. I took some out the other day and made Chile Verde. I started out the night before by roasting 7 tomatillos, a head of garlic, two poblanos, and two yellow onions quartered. Later I seeded the poblanos.
The next day I hit them with the stick blender while I browned the ground pork( about 3.5 pounds ).
I then added a raw diced onion and finished browning the meat. Later I added the ground roasted vegetables, a can of original rotel tomatoes, one can of green medium heat enchilada sauce, one can of cannellini beans, a couple tablespoons of fresh ground cumin and salted to taste.
It was really good! Hot pepper cheddar cheese cornbread recipe another time!
