I have a friend who is from Florida. He says the mullet from over there are "cleaner" and are good to eat. He said the Texas mullet are muddy tasting.
I guess they have a different diet or something. |

Swim across the Sabine, and you can land 25 12" trout, to your hearts content!!!
Yea, they eat them mullet (same species), but they are smoked and combined with herbs and various mayo's to make a 'pate type dip that goes on crackers. It's surprisingly not bad, but I'm of the opinion that you could smoke an old gym shoe long enough and make the same 'pate out of it!! All you really taste is the smoke flavor.
The catfish nuggets are kinda steep, at $2.99 / lb. |

those trout looks gross....I mean seriously, those things are all mush...looks like you could cut off the tail and squeeze it all out like paste...

Its something i have said forever, when my ancestors came across from Germany/where the czech republic is now, etc. I was so lucky they decided on the coastal bend area - it could have been Ohio, it could have been Kansas , and as awful as it sounds, heck it could have been Austin. I told my dad everytime I come through where his grandparents are buried, I go over and kiss the head stone and say 'thanks'. anything after a few hours on the smoker will eat - ok, maybe a day for javelina
and probably similar for gumbo - as long as your brown roux is correct, doesn't much matter what you put in it |

| There is a Vietnamese fish sauce made from fermented mullet. I have not tried it. |
