nice haul!
Dawg....take one dolphin fillet and cover it w/ mayo/ or mx mayoneasia(mayo w/lime) and old bay... grill skin down over mesquite...

let us know how yall did w a grilled mayo/dolphin fillet?
oh and the tuna...steak 'em... honey, ginger, soy , garlic, sesame seeds...whip those up in a sesame oil and grill hot fast over blazing mesquite coals and red/pink inside depending on yer guests...
thro out a yuppie salat( all those greens and baby leaf this and that.......)(vinagarette whatever makes yall happy) sear the tuna steaks w/sesame seeds...
COLD decent beer, and a chilled white chard or sauv blanc for those who have a problem w/ beer an feech...
If someone needs more carbs.. wahld Reeses rice w/ a palm-full of Texmati white rice makes a good side..add butter and steak seasoning...

I haven't tried this yet but I will. It was definitely a meat haul for me. I've tried the tuna several ways and its all been good.
A big surprise to me was the barracuda! A lot of folks weren't keeping them but a few were. Having never had them before I decided to give them a shot and I'm sure glad I did. I won't throw another one away, or at least not the smaller ones. I grilled some and it was some kind of good!!! Apparently its poisonous in some places and that scares folks off??? Don't know but we ate it and survived and will again! lol |

I keep looking at the pics. What an awesome trip. I need to make a trip like that oneday. Everytime I have been out in the gulf that far I was always on the working end of the stick, never for enjoyment. Maybe that's why I don't like going out there. _________________ I LIKE MINE FRIED. |

You should do it! I had wanted to go for a long time, just didn't want to go by myself. Finally the guys from the hunting site got this trip going and I got my chance. I have caught some big hard fighting offshore fish before kings, ling, aj's or so I thought. Nothing before even got close to the fight those yellow fin put up!!! They put up a butt whipping I won't soon forget!!! Just incredible what those critters can do! I will go again and this time with a goal to break 100lbs on a yellow! |

barracuda are quite tasty...
but near reefs, most contain ciguatera, bad stuff.
since the Gulf have almost no reefs, most cudas are OK. _________________ the creepy uncle that scares the kids.... |
