I live in South Texas to fish. Corpus is Mecca for the Saltwater nut that I am.

Needless to say, I love to eat all fish. All types, broiled fried, baked, grilled, and poached I do have my culinary favorites though.

Here is my list of my personal favorite top saltwater food fish that I catch here in reverse order !

#10. Shark. Definitely good grilled and fried. I love it in beer batter, fried in lard.after being soaked in milk for a day. Like a Mrs Paul's Fish Stick. I just have gotten to a point where I would really like to release all sharks.

#9 Galftop. Friends of mine swear that it tastes just like channel cat. It does not. Cooked up on grill, it can be delicious. I typically let them swim free if I'm catching other fish. If it's all that's biting, then Galftop it is !

#8. Kingfish. Best eaten same day caught. Marinated and grilled served with grilled vegetables and rice . Yum.

#7 Speckled Trout. Great game fish, fun to catch. One might think this fish deserves a higher rating. Smaller 15-18 inch fish are delicious fried, or broiled. Larger fish, I will release. I get many worms in Larger specs. More so than other species.

#6. Redfish. I love it ! Only problem, that it is the most abundant gamefish that I catch. I eat it more often than any other fish. Variety is the spice of life.

#5. Spanish Mackerel. Also best same day caught. These fish need to go on ice as soon as possible. A delicate flesh, great for ceviche. Pan seared in butter. Cooks quick.

#4. Sand Trout and Whiting. Takes a few of these little guys, but they are tender beyond belief. Whiting are amazing on a sandwich. You can eat these fish while fishing. No size limit or bag. Both fish are as delicate as fish can be.

#3 Flounder. Baked in sour cream, fried, always a favorite. Pan seared in butter.

#2 Black Drum and Sheepshead. Yes, my number two spot goes to these two. Great any which way you want to cook it. No fishy flavor. Just great eating. Freezes well.

#1 Pompano. It's why I cant wait to hit the beach. It's the only fish I know of, where the skin is not only edible, it's amazing. They have no scales. Just gut fish, wash well and cook. It is not nearly as good of a fillet as it is head on, and cooked whole. Huge bones are not a problem.

im a sucker for it and really cant wait till the mr starts going btb for it Smile
blackened (if done right) or pan seared are my favorites. I have had it fried but im not a fan. im currently on a sever fish taco kick Wink

I like just about all of those on there.

Inshore/nearshore I have

#1 Black Drum/ Sheepshead
#2 Flounder/pompano
#3 Redfish
#4 Trout
#5 Whiting

Offshore Gulf

#1 Yellowfin
#2 Wahoo
#3 Mahi Mahi
#4 Grouper
#5 Snapper
#6 Ling/AJ
#7 King Mackerel especially balled out and smoked

Snapper is amazing, I just get too seasick to go about the catching ! I also left ling off my list, as I have never caught one, but from what I hear is amazing as well.

I should have posted top 10 inshore eating fish.

I love to hear recipes ! Keep em coming !

Ive really only caught edible reds and a flounder..



The reds I baked I use alum foil ... mayo on both sides squeeze lime juice, add garlic salt and onion salt also some black pepper and put some hot sauce on both sides (your choice) I use valentina. Put in oven for 30 to 35 mins depending on size of fillet at 425 degrees and bam! Accompany it with some white rice and some veggies and you now have a buffalo redfish dinner lol

With flounder its almost the same thing but I use butter, garlic, and rosemary along with some black pepper Wink

Tyler's list is spot on! IMHO, there is no beating a fresh slice of Wahoo or Yellowfin sashimi.

For inshore, I'd add striped bass. Unlike reds and drum, they don't get gross and nasty when they are bigger.

I second that Luke, stripers are GREAT!!!!! Shocked
Personally, I can't understand the snapper thing. I'll take AJ, Mahi, Wahoo and Cobia anytime, anyplace, anywhere or readily trade my snapper for either of the four! Wink I haven't eaten them all, just the Red, Beeliners and Mangrove. Just don't like the the mushy, strong tasting meat that much. Heck, I like Smacks WAY more than any snapper that I've had.

I love YF too but have never had any fresh from the boat. Grouper is in there too.

I absolutely love fried fish, but also like it prepared other ways as well. Here is my list of all Gulf fish species I have eaten in order of my preference for their flavor:

1 Flounder - fresh caught, grilled whole with butter and lemon, is to die for. I love it fried too.
2 Red Snapper - I love this species grilled, fried or baked.
3 Blackfin Tuna - fresh grilled was awesome.
4 Grouper
5 Drum
6 Sheepshead
7 Speckled Trout - I love the flavor, but sometimes it is a little mushy, even when fresh
8 Sand Trout / Gulf Trout
9 Barred Grunt - One day in 1983 these were in thick off the Fish Pass jetties. Only time I have ever caught them. I would catch one on just about every cast with dead shrimp. They were smallish and greenish yellow in color with dark bars like a sheepshead. I filled a stringer with them. The small fillets were delicious fried.
10 Whiting
11 Redfish
12 Pigfish - Piggy perch are very tasty if you can get them big enough to bother with.
13 Croaker
14 Dolphin
15 Spanish Mackerel
16 King Mackerel - only like it grilled fresh
17 Gaftop - only tried it once.
18 Shark - did not like it broiled the one time I had it.
19 Pinfish - one day in my youth I was catching some large ones (for Pinfish anyway) and nothing else was biting, so I decided I would give them a try fried up. While edible, I would not bother with them again unless I was starving as they had a weird grassy taste.

Nice ! Everyone's tastebuds are different. My problem with founder as number one, it's a stinky fish.... Fillets always have an off smell. Delicious every which way I cook it.

My new litmus test for fish is either poaching or pan cooked in butter, but you are reading a sentence generated by someone who likes to eat carp and alligator gar !
