been jonesin' for some...

tweaked it a lil'...
planning a late winter/early spring beach trip, so I did a little experimenting...
only had canned oysters, but it turned out pert good...
added some canned mushrooms and a splash of beer before the oysters... used half/half..and some left-over heavy cream.
probably be even better w/some chopped spinach...
only had dried parsley, so I threw it in the roux along w/a teaspoon of minced garlic.
good stuff w/butter crackers.
for a beach trip, using only canned/dried stuff... I think this'll fill bellies around a fire.

Looks good to me!

Just went to Alby's in Rockport today to get some oysters. Fried tonight, but oyster stew is on the menu tomorrow. My recipe isn't far from yours, only major change is tarragon. For me at least, its the magic ingredient. Dried works.

On another note, I had the best oyster po-boy of my life while I was there at Alby's today. No relation and no interest, just a damn good sammich. Better than any I have had in Louisiana, which is a lot. Worth a shot if you guys are in the neighborhood!

We do like our excursions to Rockport Fulton. Me and Deb have some very fond memories from there. The poboys are awesome at Albys and the Philly cheese steak at Moon dogs is worth the drive.
