Linguine with Red Clam Sauce
Ingredients
2 tablespoons salt for boiling pasta
linguine pasta I use a bundle about the size of a quarter
1 Tablespoon olive oil
2 Shallots, diced
2 Cloves minced garlic
1/2 teaspoon crushed red pepper flakes
1/2 cup dry white wine I use Vermouth
2 ounces tomato paste
1 (14-ounce) can diced tomatoes
2 Cans Chopped Clams in Juice 6.5 ounce can
Directions
Set a large 1-gallon pot of water with a pasta insert over high heat. Bring to a boil and add 2 tablespoons salt. Add the uncooked pasta to the water and cook for 5 minutes.
Begin making the sauce while the pasta water is heating up. Set a large 14-inch saute pan over medium-high heat. Add the olive oil to the pan and once hot, add the Shallots and saute until lightly caramelized and translucent. Add the garlic and crushed red pepper flakes and saute until fragrant, about 30 seconds. Add the wine and tomato paste stir to combine well and cook until the wine has nearly completely evaporated. Add the diced tomatoes Clams juice and all and season to taste. As the tomatoes heat up, mash a few of the pieces. After the pasta has cooked about 5 minutes drain and add to the pan toss to combine and bring the sauce to a boil and cook the pasta in the sauce until done to your taste. Add pasta water if the sauce gets too dry.
I use the Bumble Bee brand of chopped clams. Baby clams dont work for this recipe
